Coffee Design is food design applied to coffee. Until a few years ago, this field did not even exist, but Lavazza has transformed coffee design into a mouth-watering art form that will surprise you. Inside the Lavazza Training Center is a laboratory dedicated exclusively to Coffee Design: Espresso Based Beverages, where the team develops innovative products, and experiments with new flavour pairings, utensils used in the preparation and service of coffee.
Lavazza's century of experience and creative flair have provided the impulse for this exciting adventure. The research carried out at the Training Center has turned a whole host of remarkable ideas into reality. The first steps towards Coffee Design were taken in 1998 when the Training Center team were asked to research new coffee-based recipes for the menu at San Tommaso 10.
Since then, work has continued with the creation of syrups, milk texture and other preparations featured in Lavazza’s first range of creative recipes, I Piaceri del Caffè, and the development of other, more sophisticated specialities.
The Coffee Design recipes are the result of a great team effort which has involved high-profile, pioneering chefs, including Ferran Adrià, Davide Oldani, Carlo Cracco, working alongside a team of designers and confectioners
